Use cauliflower of any color, i love the green and the purple, and an onion... Slice them thin and toss with olive oil and a few cloves of garlic. Roast in the oven at 425 for 35 minutes.... Tossing occasionally. Sprinkle with Parmesan cheese and roast for another 10 minutes.
Soak rice noodles in boiled water for ten minutes, rinse and heap on a plate... Top with the roasted cauliflower. So simple and so delicious!
