Basics


Ghee is the staple of our Ayurvedic lifestyle. It's easy to make, is the most healthy oil for cooking, adds a nutty delicious flavor to any dish. Indispensable . Just take a pound of good organic butter and melt it on medium heat... Not stirring, but watching it. It will bubble and foam up. The milk solids will fall to the bottom of the pan. It will make crackling sounds...and when these stop... Remove the on from the heat and let it sit for a bit. Pour the ghee through  fine mesh.... I use a nylon nut bag, into a glass jar. Let cool and there you have it. It will last for months with no refridegeration.... Although this is unlikely as it is so delicious!

Sweet potatoe, kale and onion are all you need to make this delicious, colorful nod restorative soup. Brown chopped onions in ghee, add the chopped kale and sweet potatoes. Add water or vegetable broth, smoked salt and pepper, simmer til potatoes are tender.
